Join Aubrie of Bramble Tail for our series in cheesemaking, condensed down into one full day. We’ll start the morning learning how to milk cows, followed by a farm tour and discussion on grassland management. After a break for lunch, we’ll spend the afternoon discussing the alchemy of cheesemaking and dairy fermentations, including a hands-on experience making fresh ricotta. Perfect for those interested in homesteading and starting your own home-scale micro-dairy.
Schedule of the day:
8am: Meet at the Creamery to prep milking equipment; walk down with the cows to the milking barn
8:30am - 10am: Learn small scale cow milking
10am - noon: Farm Tour and discussion of grassland management and regenerative grazing
Noon - 1pm: Lunch Break. Bring a dish to share, plus charcuterie board and salad provided.
1pm - 5pm: Discussion of various dairy fermentation processes accompanied by farmstead cheese tastings. Make home-scale fresh ricotta.
